This is not your typical naan recipe, this a semi-naan-on-yo-ass for beginners and avid bakers just the same. It all comes down to three easy things:

  • The Dough: Yogurt for tenderness, sugar for slight sweetness, and a creamy crumb that stays moist.
  • The Cheese:  Add lots of mozzarella or paneer cheese between the lasagne layers. This makes every bite creamy and rich.
  • The Pan: By-pass the tandoor and get those perfect, authentic-looking blisters in minutes using a scorching-hot skillet.

This recipe will be your BFF if you’re patient and have a hot pan. Naan literally just takes a minute and 45 seconds to cook, so you have to be on the ball. The bread bakes up light and airy because the high heat creates air pockets that puff it up. The cheese, snuggly packed away inside, melts perfectly — it does not singe and let loose.

Ingredients You’ll Need

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Shredded Mozzarella cheese 1 Cup (Or crushed Paneer)
  • 3 tablespoons melted unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped

  • Hydrate the Yeast: Stir together warm H2O, sugar w/ yeast in a small bowl. Stir gently and let sit for 5-10 minutes, or until it becomes foamy. A sign of an active yeast.
  • Mix the Dough: in a large bowl, whisk together flour and salt And add the yogurt and the yeast- activated mixture. Stir with a spoon until you get a shaggy dough, then transfer to a lightly floured surface.
  • Re-knead the Dough: Knead the dough for an additional 5-7 minutes, or until it is smooth and elastic. The original dough should be pliable, not sticky. Transfer to a lightly oiled bowl, cover with a kitchen towel, and allow it to rise in a warm place until doubled in size (approximately 60 minutes).
  • Punch down the dough then liberally divide into 6–8 equal balls (depending on how many you want to make). Flatten a ball into a circle, or tear-drop shape on the floured surface. Put a lot of cheese on one half and fold other half over, seal edges well Lightly press back down to 1/4 inch again.
  • Cook the naan: Get a cast iron pan or a non-stick pan smoking hot. Put the filled naan on the hot tawa. Scientifically turned around. Cook for 1 to 2 minutes until the surface has big bubbles and the bottom is golden-brown with dark spots.
  • Flip and Cook Again: Turn the naan to the other side. Let it cook for a minute more. It needs to be golden-brown on both sides.

Make garlic butter glaze While the rice cooks, stir together melted butter with minced garlic and finely chopped fresh cilantro in a small bowl. Once the naan is cooked on one side, smear minced garlic butter nicely.
